Irina Skoeries is the Founder and CEO at Catalyst Cuisine. Two years ago, she was diagnosed with a supposedly lifelong body crippling auto-immune disease, Rheumatoid Arthritis. It wasn't until college, when I began experiencing the diets and lifestyles of new roommates, that my eyes were opened to new ways of thinking about food. "Iceburg isn't the only type of lettuce? Meat isn’t the only form of protein? Quinoa…exists!?" After college I spent a summer experimenting with my everyday diet by cutting out dairy, gluten, red meat and processed sugar. I HAVE NEVER FELT MORE ALIVE AND IN LOVE WITH MY BODY. Fast forward through the next decade of my life, and I still stick to a way of eating that is at least 80% clean, organic, unprocessed. I focus on real foods that are raised/grown/prepared the right ways. When I'm not pouring over food journals and bettering the health of my clients, you might find me practicing yoga, wandering the aisles of Whole Foods for hours at a time, or watching multiple episodes of West Wing back to back with my better half as we await the birth of our first child coming April 2017. www.madelinenutrition.com
